I was wondering about the fact that Inception interviews with the cast did not explode all over the internet like Star Trek interviews did.

I would definitely have to say that it is because Inception actors are not as comfortable in their interviews as Star Trek actors are. The bromance between Chris Pine and Zach Quinto, plus the way Zoe Saldana, John Cho, Karl Urban, Anton Yelchin and Simon Pegg took to the interviews was utterly great and filled with so much chemistry. I love the Star Trek crew, whether on screen or off screen. They are simply great people, and it is easy to listen to them.

Maybe it's because Inception is a film that is difficult to put into words, the actors of Inception find it hard to articulate what they enjoy about the movie. They aren't as playful with each other. Perhaps it is also because they haven't been trained till they are polished and shiny, which is not necessarily a bad thing. Not all actors are native English speakers as well. Most of them are indie actors, utterly brilliant ones at that, but they may not be good at articulating themselves.

Inception is definitely a more polished version of the cast, but it doesn't mean that their works aren't worth following. I respect all of them, for their immense talent, and for the fact that they choose to make good use of it. I enjoy the fact that they take their craft seriously. I definitely look forward to the extras in the DVD where the cast may be more comfortable working on set.

Edit: I think it's really cool how Joseph Gordon-Levitt is so enthusiastic about the movie, how Ellen Page simply enjoys working in the movie, how Cillian Murphy enjoys the casting, how Tom Hardy enjoys the work that he does. They all have their gushing side, and places where they don't really speak much. Inception speaks for itself, really. I like how all the actors are willing to deconstruct the film, and it really shows how intelligent they are. Smart people are my fav kind of people.
